  • 454 g lean ground beef Choose 90% lean for healthier option
  • 8 flour or corn tortillas Choose your preferred type
  • 480 ml enchilada sauce Store-bought or homemade
  • 100 g shredded cheddar or Monterey Jack cheese Use either cheese or a mix of both
  • 1 medium onion, diced Yellow onion preferred
  • 2 cloves garlic, minced Adjust to taste
  • 1 tsp cumin Adds depth of flavor
  • 1 tsp chili powder Adjust spiciness to taste
  • to taste Sour cream For topping

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with diced onions until translucent (5-7 minutes).
  3. Add minced garlic, cumin, and chili powder; sauté for another minute.
  4. Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the tortillas and sprinkle with cheese.
  6. Bake uncovered for 20-25 minutes until bubbly and golden.

Notes

Serve with a dollop of sour cream and a side of fresh salad for a complete meal.
