- In a large bowl, combine the olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Add the chicken pieces and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high heat. If using skewers, soak wooden skewers in water for 30 minutes to prevent burning.
- Thread the marinated chicken pieces onto skewers if desired, leaving a little space between each piece.
- Place the skewers or chicken pieces directly on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- While the chicken is grilling, prepare the creamy garlic sauce. In a small bowl, mix together the mayonnaise, sour cream, minced garlic, and a pinch of salt and pepper until smooth.
- Once the chicken is done, remove it from the grill and let it rest for a few minutes. Serve the grilled chicken bites with the creamy garlic sauce on the side for dipping.
