Ingredients
  

Dry Ingredients
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
Wet Ingredients
  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp cotton candy extract
  • 3 tbsp cotton candy-flavored gelatin powder
Decoration
  • 4 drops Neon food coloring pink, blue, purple, green
  • 0.5 cup cotton candy torn into small pieces for garnish
  • 0.25 cup edible glow-in-the-dark sugar optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat butter and sugar together until light and fluffy.
  4. Add the egg, vanilla extract, and cotton candy extract, mixing until well combined.
  5. Gradually add the dry ingredients into the wet ingredients, stirring until a dough forms.
  6. Divide the dough into four equal portions and tint each portion with a different neon food coloring.
  7. Lightly knead the colors together to create a marbled effect, but do not overmix.
  8. Roll dough into 1-inch balls and place them onto the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 8-10 minutes or until edges are set but centers are soft.
  10. Remove from the oven and immediately sprinkle edible glow-in-the-dark sugar and small pieces of cotton candy on top.
  11. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, serve these cookies under a black light to make the glow-in-the-dark effect more prominent. You can also swap in different flavored extracts and food colorings to suit your taste.
