French Onion Meatloaf with Melted Swiss Cheese – Slow Cooker Style 🥘🧀

Ingredients
  

Caramelized Onions
  • 3-4 large sweet onions sliced
  • 4 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon granulated sugar
Meatloaf
  • 1 pound ground beef
  • 1 cup Italian herb bread crumbs
  • 1 cup milk
  • 1 large egg
  • 1 oz. package French onion soup mix
  • 1/2 cup cooking sherry
  • 1/2 teaspoon Worcestershire sauce
Topping
  • 4 oz. Swiss Gruyère, or provolone cheese sliced
  • to taste Fresh thyme sprigs for garnish

Method
 

  1. Place sliced onions at the bottom of a 6 Qt. slow cooker.
  2. Sprinkle with salt, pepper, and sugar.
  3. Dot with butter and drizzle with the olive oil.
  4. Cook on LOW for 9 hours until they are caramelized.
  5. In a bowl, combine ground beef, bread crumbs, milk, egg, and onion soup mix. Mix well and shape into a loaf.
  6. Pour cooking sherry and Worcestershire sauce over the caramelized onions in the cooker.
  7. Place the meatloaf on top of the onions.
  8. Set the slow cooker to HIGH and cook for 3 hours, or until the meatloaf reaches an internal temperature of 160°F.
  9. Top the meatloaf with slices of cheese.
  10. Cook for an additional 20-30 minutes on HIGH, or until the cheese is fully melted and bubbly.
  11. Serve the meatloaf sliced, topped with caramelized onions and juices from the cooker.
  12. Garnish with fresh thyme sprigs.

Notes

Serve with mashed potatoes or a green salad for a complete meal. You can substitute the cheese with your favorite melting cheese.
