Ingredients

For the chicken soup
  • 2 lbs boneless, skinless chicken breasts Can substitute with chicken thighs
  • 4 cups chicken broth Use low-sodium broth for less salt
  • 1 cup heavy cream Adds creaminess to the soup
  • 3 tbsp butter For sautéing the vegetables
  • 1 small onion Diced finely
  • 3 carrots carrots Sliced thinly
  • 3 celery stalks celery Sliced thinly
  • 2 cloves garlic Minced finely
  • 1 tsp onion powder Enhances onion flavor
  • 1 tsp garlic powder Adds depth of flavor
  • 1 tsp Italian seasoning For a hint of herbal flavor
  • 0.5 tsp black pepper Adjust to taste
  • tsp Salt To taste
For the easy dumplings
  • 2 cups all-purpose flour For making dumplings
  • 1 tbsp baking powder Helps dumplings rise
  • 0.5 tsp salt Balances the flavor
  • 0.75 cup milk Adds moisture to dumplings
  • 3 tbsp melted butter Adds richness to dumplings

Equipment

  • Large Pot or Dutch Oven

Method

  1. Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook for about 5–7 minutes until they begin to soften.
  2. Add the garlic, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir for about 30 seconds.
  3. Add the chicken breasts and chicken broth. Bring to a gentle boil, then reduce the heat, cover, and simmer for about 15–20 minutes, or until the chicken is cooked through.
  4. Remove the chicken and shred it with two forks. Return the shredded chicken to the pot and stir in the heavy cream.
  5. Make the dumplings: Mix flour, baking powder, and salt. Stir in the milk and melted butter until a soft dough forms. Don't overmix.
  6. Drop spoonfuls of dough directly into the gently simmering soup. Cover the pot and cook for about 15 minutes. Avoid lifting the lid too often—the steam helps cook the dumplings!
  7. Remove the lid, gently stir around the dumplings, and simmer for another 2–3 minutes if needed. The dumplings should be fluffy and cooked through.

Notes

Serve warm and enjoy! A little fresh parsley and cracked black pepper on top makes it even better.
