Method
- Preheat your oven to 400°F (200°C).
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko and Parmesan cheese.
- Season chicken breasts with salt and pepper. Dredge each piece in flour, dip in eggs, and coat with the breadcrumb mixture.
- Heat butter and olive oil in a frying pan over medium heat. Cook chicken until golden brown on both sides, about 4-5 minutes per side.
- Transfer chicken to a baking sheet and bake for 10 minutes or until cooked through.
- In the same pan, add minced garlic and cook for 1 minute. Stir in chicken broth, heavy cream, and lemon juice. Simmer until thickened.
- Serve chicken drizzled with garlic sauce and garnish with chopped parsley.
Notes
For a gluten-free version, substitute panko and flour with their gluten-free counterparts. Adjust seasoning to taste.
