  • 4 pieces boneless chicken breasts pounded to 1/2 inch thickness
  • 100 g grated Parmesan cheese freshly grated recommended
  • 100 g panko breadcrumbs use gluten-free breadcrumbs for a gluten-free version
  • 60 g all-purpose flour use gluten-free flour for a gluten-free version
  • 2 large eggs beaten
  • 4 cloves garlic minced
  • 30 g butter for frying
  • 15 ml olive oil for frying
  • 120 ml chicken broth for sauce
  • 120 ml heavy cream for sauce
  • 15 ml fresh lemon juice for sauce
  • 15 g fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko and Parmesan cheese.
  3. Season chicken breasts with salt and pepper. Dredge each piece in flour, dip in eggs, and coat with the breadcrumb mixture.
  4. Heat butter and olive oil in a frying pan over medium heat. Cook chicken until golden brown on both sides, about 4-5 minutes per side.
  5. Transfer chicken to a baking sheet and bake for 10 minutes or until cooked through.
  6. In the same pan, add minced garlic and cook for 1 minute. Stir in chicken broth, heavy cream, and lemon juice. Simmer until thickened.
  7. Serve chicken drizzled with garlic sauce and garnish with chopped parsley.

Notes

For a gluten-free version, substitute panko and flour with their gluten-free counterparts. Adjust seasoning to taste.
