Ingredients
  

Cod Fillets
  • 4 fillets cod fillets about 6 oz each
  • 2 tablespoons olive oil for brushing
  • 0.5 cup grated Parmesan cheese finely grated
  • 0.75 cup panko breadcrumbs adds extra crunch
  • 1 tsp lemon zest adds freshness
  • 0.5 tsp garlic powder for flavor
  • 2 tablespoons unsalted butter melted for herb sauce
  • 1 tablespoon fresh parsley chopped for herb sauce
  • 1 whole lemon cut into wedges for serving

Method
 

  1. Preheat the air fryer to 400°F (200°C).
  2. In a mixing bowl, combine the Parmesan cheese, panko breadcrumbs, lemon zest, and garlic powder.
  3. Brush the cod fillets with olive oil and season with salt and pepper.
  4. Coat the fillets in the Parmesan mixture, pressing lightly to adhere.
  5. Place the coated fillets in the air fryer basket in a single layer.
  6. Cook for 12-15 minutes or until the cod is cooked through and golden brown.
  7. While the cod cooks, mix melted butter with chopped parsley.
  8. Serve the cod with lemon wedges and drizzle with herb butter sauce.

Serve with a side of vegetables or a fresh salad for a complete meal. Adjust seasoning according to taste.
