  • 1 tsp olive oil for sautéing
  • 2 cloves garlic minced
  • 1 cup chopped onion finely chopped
  • 2 cups low-sodium chicken broth for flavor
  • 1 can Great Northern beans 15.5 oz, drained and rinsed
  • 1 can black beans 15.5 oz, drained and rinsed
  • 1 can diced tomatoes with chilis 15.5 oz, drained
  • 0.5 cup whole kernel corn frozen
  • 1 cup shredded Colby and Monterey Jack cheese for creaminess
  • 3 oz cream cheese adds creaminess
  • 5 oz lump crab fresh or canned
  • 5 oz lobster meat fresh or pre-cooked
  • 1 pound shrimp peeled and deveined
  • to taste seafood seasoning enhances seafood flavor
  • to taste chili powder adds heat and depth
  • to taste cumin for a smoky flavor
  • to taste red cayenne pepper adds a kick
  • to taste salt season to preference
  • to taste pepper season to preference

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add minced garlic and chopped onion, cooking until the onion is translucent.
  3. Pour in the chicken broth and add the Great Northern beans, black beans, diced tomatoes, and corn.
  4. Stir in the shredded cheese and cream cheese until melted and smooth.
  5. Add the crab, lobster, and shrimp, cooking until seafood is heated through.
  6. Season with seafood seasoning, chili powder, cumin, red cayenne pepper, salt, and pepper to taste.

Notes

Serve with crusty bread or over rice. Adjust the spices to suit your taste.
