- Bring a large pot of salted water to a boil and cook the pasta until just al dente. Reserve about ½ cup of pasta water and set aside.
- Pat the chicken dry and coat it lightly with oil. Season with sazón, garlic powder, Creole, Cajun, adobo, paprika, salt, and pepper. Cook in a large skillet over medium-high heat for 5–6 minutes per side. Remove and slice into strips.
- Melt 2 tablespoons of butter in the same pan, add minced garlic, and sauté for 30 seconds. Stir in cream cheese, then add heavy cream and whisk until smooth. Season with salt, pepper, and Cajun or Creole seasoning. Add reserved pasta water, then stir in mozzarella and Parmesan until melted.
- Add the cooked pasta into the sauce, tossing to coat. Mix in sliced chicken, stirring until evenly distributed.
- Serve immediately, garnishing with extra Parmesan or Cajun spice if desired.
Notes
For an extra kick, add more Cajun seasoning or red pepper flakes. Pair with a green salad for a balanced meal.
