Ingredients
  

Potatoes and Onion
  • 6 g potatoes peeled and sliced into 1/8-inch rounds
  • 1 g large onion sliced
Cheese Sauce
  • 1.5 cups milk I use Borden whole milk for extra richness
  • 4 cups cheddar freshly shredded for the best melt
  • 4 tbsp butter I prefer Kerrygold unsalted for this
  • 1 tsp salt for cheese sauce
  • 0.5 tsp black pepper for cheese sauce
  • 0.5 tsp garlic powder for cheese sauce
Pork Chops
  • 5 g pork chops bone-in, about 1-inch thick for juiciness
  • 0.5 tsp salt for pork chops
  • 0.25 tsp black pepper for pork chops

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Layer the sliced potatoes and onion in an oven-safe dish.
  3. In a saucepan, melt the butter over medium heat, then add flour and stir until smooth. Gradually whisk in milk, salt, black pepper, and garlic powder. Cook until thickened.
  4. Remove from heat and stir in shredded cheddar until melted.
  5. Pour the cheese sauce over the potatoes and onions, ensuring even coverage.
  6. Season the pork chops with salt and black pepper and place on top of the potato mixture.
  7. Cover with foil and bake for 1 hour. Remove foil for the last 10 minutes to brown the top.

Notes

For extra flavor, try adding a pinch of nutmeg to the cheese sauce. Serve with a side of steamed vegetables for a complete meal.
