Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour sifted for best results
  • 3/4 cup granulated sugar for the batter
  • 2 tsp baking powder ensure it's fresh
  • 1/2 tsp ground cinnamon adds warmth to the loaf
Wet Ingredients
  • 1/2 cup vegetable oil or use a neutral oil
  • 2 large eggs at room temperature
  • 3/4 cup milk whole or 2% works best
  • 1 tsp vanilla extract optional but adds flavor

  • 1 cup peeled diced apples about 1 medium apple
  • 1/2 cup chopped walnuts or pecans adds crunch
  • 1/3 cup raisins or dried cranberries add sweetness and texture
Topping
  • 1/4 cup granulated sugar for topping
  • 1 tsp ground cinnamon for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a bowl, whisk together flour, 3/4 cup sugar, baking powder, and 1/2 teaspoon cinnamon.
  3. In another bowl, whisk eggs, then add oil, milk, and vanilla (if using).
  4. Gently fold dry ingredients into wet ingredients until just combined.
  5. Fold in diced apples and any optional add-ins.
  6. Transfer batter to prepared loaf pan and smooth the top.
  7. Mix 1/4 cup sugar with 1 teaspoon cinnamon and sprinkle evenly over batter.
  8. Bake 50–60 minutes, tenting with foil if browning too fast, until a toothpick comes out clean.
  9. Cool in pan 10–15 minutes, then transfer to a wire rack to cool completely.

Notes

For a richer flavor, try using brown sugar instead of granulated sugar for the topping. Serve warm with a scoop of vanilla ice cream for an indulgent treat.
