- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, baking powder, cinnamon, and salt.
- In another bowl, beat the butter and sugars together until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll out the dough and spread the filling of brown sugar and cinnamon over it.
- Roll the dough into a log and slice into individual cookies.
- Place cookies on the prepared baking sheet and bake for 12 minutes or until golden brown.
