Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp salt
Wet Ingredients
  • 0.5 cups unsalted butter softened
  • 0.5 cups granulated sugar
  • 0.5 cups brown sugar packed
  • 1 large egg
  • 2 tsp vanilla extract
Filling
  • 0.5 cups brown sugar packed
  • 2 tsp ground cinnamon

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, baking powder, cinnamon, and salt.
  3. In another bowl, beat the butter and sugars together until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Roll out the dough and spread the filling of brown sugar and cinnamon over it.
  6. Roll the dough into a log and slice into individual cookies.
  7. Place cookies on the prepared baking sheet and bake for 12 minutes or until golden brown.
