Wet Ingredients
  • 2 units eggs large
  • 200 g sugar white granulated
  • 115 g melted butter unsalted
  • 240 ml eggnog full-fat recommended
  • 30 ml rum flavor extract or to taste
  • 5 ml vanilla extract pure vanilla
Dry Ingredients
  • 280 g all-purpose flour sifted
  • 30 ml baking powder ensure it is fresh
  • 2.5 ml salt fine grain
  • 1.25 ml nutmeg freshly grated for best flavor

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, beat eggs and sugar until smooth and creamy.
  3. Stir in melted butter, eggnog, rum extract, and vanilla until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, and nutmeg.
  5. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Optionally, dust with powdered sugar or drizzle with glaze before serving.

Notes

For an extra festive touch, consider adding dried cranberries or chopped nuts to the batter before baking.
