Ingredients
  

Cookie Dough
  • 85 g unsalted butter at room temperature
  • 100 g dark brown sugar packed
  • 1 unit egg yolk egg white reserved for another use
  • 3/4 tsp vanilla extract
  • 120 g all-purpose flour
  • 1/4 tsp fine sea salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 53 g semisweet chocolate chips mix of chopped chocolate and chocolate chips for the best photos with pools of melted chocolate

Method
 

  1. Preheat the oven to 375°F and ensure a rack is in the center position in the oven.
  2. Line a light-metal cookie sheet with a silicone mat.
  3. In a medium bowl, add the butter and brown sugar. Beat with an electric mixer on medium speed until light and fluffy, at least one full minute.
  4. Add the egg yolk and vanilla extract, and beat to combine.
  5. Sprinkle the flour, salt, baking powder, and baking soda evenly over the top of the butter mixture. Beat until combined.
  6. Stir in the chocolate chips and chopped chocolate.
  7. Scoop out 10 balls of dough, and space them evenly on the cookie sheet.
  8. Bake for 9-10 minutes until the edges of the cookies are just starting to brown.
  9. Let cool on the baking sheet for 5 minutes to set up, then move to a wire rack to cool completely before serving.

Notes

Use dark brown sugar for a richer flavor. If only light brown sugar is available, it can be substituted, but the flavor will be slightly less robust. Consider using a mix of chocolate chips and chopped chocolate for varied texture and appearance.
