Method
- Preheat the oven to 375°F and ensure a rack is in the center position in the oven.
- Line a light-metal cookie sheet with a silicone mat.
- In a medium bowl, add the butter and brown sugar. Beat with an electric mixer on medium speed until light and fluffy, at least one full minute.
- Add the egg yolk and vanilla extract, and beat to combine.
- Sprinkle the flour, salt, baking powder, and baking soda evenly over the top of the butter mixture. Beat until combined.
- Stir in the chocolate chips and chopped chocolate.
- Scoop out 10 balls of dough, and space them evenly on the cookie sheet.
- Bake for 9-10 minutes until the edges of the cookies are just starting to brown.
- Let cool on the baking sheet for 5 minutes to set up, then move to a wire rack to cool completely before serving.
Notes
Use dark brown sugar for a richer flavor. If only light brown sugar is available, it can be substituted, but the flavor will be slightly less robust. Consider using a mix of chocolate chips and chopped chocolate for varied texture and appearance.
