Ingredients
  

Salmon Tacos
  • 680 g salmon fillets skin removed
  • 2 tbsp olive oil for marinating
  • 2 tbsp honey adds sweetness
  • 1 tbsp adobo sauce from canned chipotle peppers
  • 1 item chipotle pepper finely minced
  • 1 tsp garlic powder adds flavor
  • 0.5 tsp smoked paprika for smoky flavor
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper to taste
Pineapple Salsa
  • 360 g fresh pineapple diced
  • 60 ml red onion finely chopped
  • 0.5 item jalapeño seeded and minced
  • 2 tbsp fresh cilantro chopped
  • 1 item lime juice of
  • 1 pinch salt for salsa taste
Tacos
  • 8 item small corn or flour tortillas for serving
  • 120 g shredded cabbage or lettuce optional topping

Method
 

  1. In a mixing bowl, combine olive oil, honey, adobo sauce, minced chipotle pepper, garlic powder, smoked paprika, salt, and black pepper. Mix well.
  2. Marinate the salmon fillets in this mixture for at least 15 minutes.
  3. While the salmon is marinating, prepare the pineapple salsa by mixing diced pineapple, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in another bowl.
  4. Heat the grill or skillet over medium-high heat. Cook the marinated salmon for about 5-7 minutes on each side, or until cooked through.
  5. Warm the tortillas on the grill or skillet for about 30 seconds each side.
  6. Assemble the tacos by placing pieces of salmon on the tortillas, topping with pineapple salsa, shredded cabbage or lettuce, and garnishing with lime wedges and extra cilantro.

Notes

For added crunch, consider topping the tacos with sliced radishes or a sprinkle of toasted sesame seeds. The pineapple salsa can be prepared a day in advance to save time.
