Ingredients
  

Bread
  • 2 pieces telera or bolillo rolls can substitute with any soft sandwich rolls
Chicken and Marinade
  • 1 lb boneless skinless chicken breast or thighs choose your preferred cut
  • 1 tbsp chipotle in adobo or marinade of choice for a spicy kick
  • 1 pinch Salt and pepper to taste
  • 1 tbsp Olive oil for cooking
Toppings
  • 1 piece avocado sliced
  • 120 ml refried beans use canned or homemade
  • 120 ml shredded lettuce use crisp lettuce for best texture
  • 1 piece tomato sliced
  • 0.25 piece onion thinly sliced
  • 60 ml pickled jalapeños adds a tangy spice
  • 60 ml queso fresco or mozzarella choose your preferred cheese
  • 2 tbsp mayonnaise or crema spread inside the rolls for creaminess

Method
 

  1. Slice the rolls in half and lightly toast them if desired.
  2. Season the chicken with salt and pepper, then cook in olive oil until fully done. Shred or slice the chicken.
  3. Mix the shredded chicken with chipotle in adobo or your chosen marinade.
  4. Spread refried beans on one half of each roll and mayonnaise or crema on the other half.
  5. Layer the chicken, avocado, lettuce, tomato, onion, pickled jalapeños, and cheese on the rolls.
  6. Close the sandwiches and serve immediately.

Notes

For a healthier option, you can grill the chicken instead of frying it. Serve with a side of tortilla chips or a fresh salad.
