  • 1 small bag fresh baby spinach
  • 1 dash pepper
  • 1 dash Herb and Garlic Seasoning
  • 8 oz shredded Feta cheese
  • 6 thin slices chicken breasts
  • 1 container green onion cream cheese
  • 60 ml olive oil
  • 120 ml chicken broth
  • 1 large package sliced mushrooms
  • 8 oz shredded mozzarella cheese

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Lay out the 6 thin-sliced chicken breasts in a 9×13-inch baking dish.
  3. Top the chicken with fresh baby spinach and sliced mushrooms.
  4. Sprinkle pepper and Herb and Garlic Seasoning over the top.
  5. Soften the green onion cream cheese and whisk in olive oil and chicken broth.
  6. Pour the creamy sauce over the chicken, spinach, and mushrooms.
  7. Cover the pan with foil and bake for 20 minutes.
  8. Remove the foil and bake uncovered for another 20-25 minutes.
  9. Sprinkle mozzarella cheese over the top and bake uncovered for an additional 10 minutes.
  10. Let the dish cool for 10 minutes before serving.

This dish is perfect served with a fresh salad or roasted vegetables for a complete meal.
