Chicken Kofta
  • 500 g ground chicken Lean chicken is preferable for a healthier option
  • 1 medium onion, finely chopped Adds moisture and flavor
  • 3 cloves garlic, minced Adjust to taste if you prefer less garlic
  • 1/4 cup fresh parsley, finely chopped For freshness and color
  • 1 tsp ground cumin For a warm, earthy flavor
  • 1 tsp ground coriander Adds a citrusy touch
  • 1 tsp salt Season to taste
  • 1/2 tsp ground black pepper Adjust to taste for spice
Garlic Yogurt Sauce
  • 1 cup plain yogurt Greek yogurt works well too
  • 2 tbsp freshly squeezed lemon juice Add more for extra tang
  • 1 pinch salt To taste, balance with the lemon juice
  • 2 tbsp olive oil For brushing the grill

Method
 

  1. In a large bowl, combine ground chicken, chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Mix well.
  2. Form the mixture into small oval-shaped koftas.
  3. Preheat the grill and brush it with olive oil.
  4. Grill the koftas for about 10-12 minutes, turning occasionally until cooked through.
  5. In a separate bowl, mix yogurt, lemon juice, and a pinch of salt to prepare the garlic yogurt sauce.
  6. Serve the grilled koftas with the garlic yogurt sauce on the side.

Notes

These koftas are best served hot off the grill with the cooling yogurt sauce. Consider serving with pita bread or a side salad.
