- Preheat the oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Spread the dough evenly into the prepared baking pan.
- In a small bowl, mix together the cinnamon and sugar for the topping. Sprinkle the mixture evenly over the dough.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cookie bars to cool in the pan before cutting into squares.
Notes
For a softer texture, slightly underbake the cookie bars and let them finish cooking in the residual heat of the pan.
