Snickerdoodle Cookie Bars
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cups unsalted butter softened
  • 1 cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon for topping
  • 2 tbsp granulated sugar for topping

Method
 

  1. Preheat the oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Spread the dough evenly into the prepared baking pan.
  7. In a small bowl, mix together the cinnamon and sugar for the topping. Sprinkle the mixture evenly over the dough.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cookie bars to cool in the pan before cutting into squares.

Notes

For a softer texture, slightly underbake the cookie bars and let them finish cooking in the residual heat of the pan.
