  • 4 pieces green bell peppers Choose firm and fresh peppers
  • 454 g ground beef Lean ground beef works best
  • 240 ml cooked taco rice Use any leftover rice
  • 1 can diced tomatoes Drained
  • 1 packet taco seasoning Adjust spice level to taste
  • 170 g shredded Mexican cheese Can substitute with cheddar or Monterey Jack
  • 10 g parsley For garnish

Method
 

  1. Cut the tops off peppers and remove seeds.
  2. Brown the beef, then add tomatoes, taco seasoning, and rice. Mix well.
  3. Stuff the peppers with the beef-rice mixture.
  4. Top generously with cheese.
  5. Bake at 375°F for 25–30 minutes, until peppers are tender and cheese is melted.
  6. Sprinkle with parsley and serve.

Notes

For a spicier kick, consider adding some chopped jalapeños to the beef mixture. Serve with sour cream or guacamole on the side for added flavor.
