Ingredients
  

Potatoes
  • 4 large russet potatoes scrubbed and diced
  • 60 ml olive oil
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley optional
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes with olive oil, ranch seasoning, salt, and pepper.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 30-35 minutes, or until golden and crispy.
  5. Remove from the oven and sprinkle with cheddar and Parmesan cheese.
  6. Return to the oven for an additional 5-10 minutes, until cheese is melted.
  7. Garnish with fresh parsley before serving.
