Method
 

  1. Make the meatloaf: In a large bowl, combine ground beef, onion, breadcrumbs, egg, ketchup, Worcestershire sauce, garlic powder, Italian seasoning, salt, and pepper. Mix gently until just combined.
  2. Fill the pan: Grease a 12-cup muffin pan and divide the meat mixture evenly between the cups. Press gently into each cup.
  3. Add the topping: Spoon a generous mound of mashed potatoes over each meatloaf portion, then sprinkle with shredded cheddar cheese.
  4. Bake: Bake at 375°F (190°C) for about 25–30 minutes, or until the meatloaf is cooked through and the cheese is melted and golden.
  5. Finish: Let them rest for a few minutes, then sprinkle with fresh parsley.
