  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta
  • 0.5 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley for garnish

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.
  4. Add the penne pasta to the skillet, ensuring it's submerged in the liquid. Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
  5. Return the cooked chicken to the skillet and stir in the Parmesan cheese and mozzarella cheese until the cheeses are melted and the sauce is creamy and smooth.
  6. Remove the skillet from the heat and let it sit for a few minutes to thicken slightly.
