  • 2 cups white beans (cannellini or great northern) Canned or cooked beans are both suitable
  • 4 cups chicken broth Low-sodium recommended
  • 1 medium onion, chopped Adds sweetness and depth
  • 3 cloves garlic, minced Adds aromatic flavor
  • 1 red bell pepper, diced Adds color and sweetness
  • 1 jalapeño, sliced Adjust quantity for desired heat level
  • 2 tablespoons Cajun seasoning Can adjust to taste
  • 4 ounces cream cheese Adds creaminess
  • 0.5 cup heavy cream For a rich texture
  • 1 tablespoon lime juice Adds brightness and acidity
  • 0.25 cup fresh cilantro, chopped Garnish and flavor boost

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, red bell pepper, and jalapeño. Sauté until softened.
  3. Add chicken breasts, Cajun seasoning, salt, and pepper. Cook until chicken is no longer pink.
  4. Stir in white beans and chicken broth. Bring to a simmer.
  5. Add cream cheese and heavy cream. Stir until fully incorporated.
  6. Simmer for 15-20 minutes, stirring occasionally.
  7. Add lime juice and chopped cilantro before serving.

Notes

For a vegetarian version, substitute chicken with mushrooms or jackfruit. Serve with crusty bread or over rice for a hearty meal.
