Ingredients
  

Pasta
  • 8 oz pasta (linguine or fettuccine)
Chicken
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
Bruschetta
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Salt and pepper, to taste
  • 1 g Grated Parmesan cheese, for serving (optional) Optional, for topping

Method
 

  1. Cook pasta al dente, then set aside.
  2. In a large skillet, sauté chicken, cherry tomatoes, garlic, and basil in olive oil until chicken is cooked through.
  3. Stir in balsamic vinegar and season with salt and pepper.
  4. Combine cooked pasta and chicken mixture. Toss to combine.
  5. Serve hot, topped with grated Parmesan cheese (if desired).

Notes

For extra flavor, let the chicken marinate in olive oil and garlic for 30 minutes before cooking.
