Ingredients
  

Cake Base
  • 125 g all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 100 g sugar
  • 115 g unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla extract
Cream Cheese Layer
  • 115 g cream cheese, softened
  • 1 cup fresh blueberries
Crumb Topping
  • 50 g brown sugar
  • 30 g all-purpose flour
  • 0.5 tsp cinnamon

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a medium bowl, mix the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Spread the batter evenly in the prepared cake pan.
  6. In another bowl, beat the cream cheese until smooth, then spread over the cake batter. Sprinkle the blueberries on top.
  7. For the crumb topping, mix the brown sugar, flour, and cinnamon. Sprinkle evenly over the blueberries.
  8. Bake for 35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
