Ingredients
  

Dry Ingredients
  • 250 g all-purpose flour Sift before using
  • 30 g brown sugar Packed
  • 12.5 g granulated sugar Adjust to taste
  • 2 tsp baking powder Ensure it's fresh
  • 0.5 tsp salt Fine salt preferred
Wet Ingredients
  • 2 large eggs Room temperature
  • 437.5 ml whole milk Can substitute with almond milk for a lighter option
  • 118 ml melted butter Unsalted
  • 1 tsp vanilla extract Pure vanilla extract for best flavor

Method
 

  1. In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, and salt.
  2. In another bowl, whisk the eggs, milk, melted butter, and vanilla until well combined.
  3. Pour the wet mixture into the dry ingredients. Stir gently just until combined. Don't overmix—small lumps are fine.
  4. Heat your Belgian waffle maker and lightly grease it with butter or nonstick spray.
  5. Pour enough batter into the center of the waffle iron to fill the deep pockets without overflowing. Close and cook for about 4–6 minutes, or until golden brown and crisp.
  6. Carefully remove the waffles and stack them on a plate. Top with butter, maple syrup, powdered sugar, strawberries, and blueberries.

Notes

For extra-crispy waffles, place cooked waffles directly on a wire rack for a few minutes instead of stacking them immediately. Add a pat of butter on top and drizzle generously with warm maple syrup for that classic Belgian-waffle finish.
