Ingredients
  

Sauce
  • 240 g mayonnaise Use your favorite brand
  • 120 ml Thai sweet chili sauce Adds sweetness and spice
  • 1 tsp Sriracha Adjust to taste
  • 30 ml honey For added sweetness
Chicken and Marinade
  • 680 g boneless skinless chicken tenderloins Cut into bite-sized pieces
  • 240 ml buttermilk For tenderizing
  • 1 tsp Sriracha For extra heat
Breading
  • 95 g all-purpose flour For coating the chicken
  • 60 g cornstarch For a crispy texture
  • 1 large egg Room temperature
  • 0.5 tsp garlic powder For flavor
  • 0.5 tsp kosher salt To taste
  • 0.25 tsp black pepper To taste
  • 0.125 tsp cayenne pepper Optional, for extra heat
  • 120 g panko breadcrumbs For a crunchy coating

  • Canola oil For frying
  • Parsley Chopped, for garnish

Method
 

  1. In a bowl, mix mayonnaise, Thai sweet chili sauce, Sriracha, and honey for the sauce.
  2. In another bowl, combine buttermilk, chicken, and Sriracha. Marinate for at least 30 minutes.
  3. In a third bowl, mix flour, cornstarch, garlic powder, salt, pepper, and cayenne.
  4. Coat marinated chicken in the flour mixture, dip in egg, then coat with panko breadcrumbs.
  5. Heat oil in a frying pan and fry the chicken until golden brown and cooked through.
  6. Serve chicken drizzled with the sauce and garnished with parsley.

Notes

Make sure the oil is hot enough before adding the chicken to ensure a crispy crust.
