Ingredients
  

Apple Cinnamon Filling
  • 1 cup small-diced apples approximately 1 large Gala, peeled, cored & diced
  • 60 g light brown sugar
  • 1 tbsp all-purpose flour
  • 2 tsp apple pie spice blend
Batter
  • 220 g all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 113 g unsalted butter room temperature
  • 150 g granulated sugar
  • 1 large egg room temperature
  • 2 tsp vanilla extract
  • 180 ml buttermilk
Glaze
  • 180 g powdered sugar sifted
  • 30 ml heavy cream

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the ingredients for the apple cinnamon filling and set aside.
  3. In another bowl, mix the dry ingredients for the batter. In a separate bowl, cream the butter and sugar, then add the egg, vanilla, and buttermilk.
  4. Combine the wet and dry ingredients, then fold in the apple filling.
  5. Pour the batter into the prepared loaf pan and bake for about 50 minutes, or until a toothpick comes out clean.
  6. While the bread is baking, prepare the glaze by mixing the powdered sugar and heavy cream until smooth.
  7. Once baked, let the bread cool for a few minutes, then drizzle with the glaze before serving.

Notes

For best results, serve the bread slightly warm with a cup of coffee or tea. You can also try adding nuts or raisins for additional texture.
