Ingredients
  

Pastry
  • 1 packet refrigerated pie crusts (2 crusts) store-bought
  • 2 tbsp flour for rolling
Filling
  • 1.5 cups diced cooked ham can use leftover ham
  • 1 cup shredded cheddar cheese sharp cheddar preferred
  • 1 cup shredded mozzarella cheese for extra gooeyness
  • 2 tbsp grated Parmesan cheese adds flavor
  • 0.5 tsp Italian seasoning use your favorite blend
  • 0.25 tsp black pepper freshly ground preferred
Egg Wash
  • 1 piece egg beaten for egg wash

Method
 

  1. Prepare the filling: Mix the diced ham, cheddar, mozzarella, Parmesan, Italian seasoning, and black pepper in a bowl.
  2. Cut the dough: Lightly flour your surface and roll out the pie crusts. Cut out several round circles using a bowl or large cookie cutter.
  3. Fill: Place a spoonful of the ham-and-cheese mixture in the center of each dough circle. Don't overfill.
  4. Seal: Fold the dough over the filling to create a half-moon. Press the edges together, then crimp firmly with a fork to seal.
  5. Egg wash: Place the hand pies on a parchment-lined baking sheet. Brush the tops with beaten egg and sprinkle with a little Italian seasoning.
  6. Bake: Bake at 400°F for 18–22 minutes, or until the pies are puffed and beautifully golden brown.
  7. Cool & serve: Let them rest for 5 minutes before serving. The cheese will be hot and gooey inside!

Notes

Make a few small slits in the top of each pie before baking so steam can escape and the crust stays crisp.
