Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Season the cod fillets with salt and pepper, then place them in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Sauté the onion until translucent, about 5 minutes.
  4. Add garlic, ginger, and cook for an additional 2 minutes.
  5. Stir in coconut milk, lemon juice, and lemon zest. Simmer for 5 minutes.
  6. Pour the coconut lemon sauce over the cod fillets.
  7. Bake in the preheated oven for 25 minutes or until the cod flakes easily with a fork.
