Ingredients
  

Cooked Chicken
  • 2 cup cooked chicken, shredded
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup sour cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cucchiaino garlic powder
  • 1 cucchiaino onion powder
  • to taste salt and pepper
  • 1 cup crushed crackers (e.g., Ritz or saltines)
  • 2 tablespoons melted butter

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, frozen vegetables, cooked rice, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Transfer the chicken mixture into a greased 9x13-inch baking dish.
  4. Sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the top of the casserole.
  5. In a separate bowl, mix the crushed crackers with melted butter until well coated. Sprinkle the cracker mixture over the cheese layer.
  6. Bake for 45 minutes or until the casserole is bubbly and the top is golden brown.
  7. Remove from the oven and let it cool for 5 minutes before serving.

Notes

For added flavor, consider seasoning the chicken before cooking or use rotisserie chicken for convenience.
