- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, frozen vegetables, cooked rice, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Transfer the chicken mixture into a greased 9x13-inch baking dish.
- Sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the top of the casserole.
- In a separate bowl, mix the crushed crackers with melted butter until well coated. Sprinkle the cracker mixture over the cheese layer.
- Bake for 45 minutes or until the casserole is bubbly and the top is golden brown.
- Remove from the oven and let it cool for 5 minutes before serving.
Notes
For added flavor, consider seasoning the chicken before cooking or use rotisserie chicken for convenience.
