Ingredients
  

Chicken
  • 680 g boneless, skinless chicken thighs or breasts, cut into bite-size pieces
  • 15 ml olive oil or sesame oil Choose your preferred oil
  • 1 tsp Salt and pepper to taste
  • 1 tsp garlic powder
Mango Glaze
  • 1 g ripe mango, peeled and chopped (or ¾ cup mango purée) Choose fresh or purée
  • 30 ml low-sodium soy sauce
  • 15 ml honey or maple syrup Choose your preferred sweetener
  • 15 ml rice vinegar or lime juice Choose your preferred acid
  • 2 cloves garlic, minced
  • 0.5 tsp fresh grated ginger
  • 0.5 tsp chili flakes optional, adjust to taste
  • 1 tsp cornstarch mixed with 2 tablespoons water for thickening

Method
 

  1. Heat oil in a skillet over medium heat. Add chicken pieces and season with salt, pepper, and garlic powder. Cook until chicken is browned and cooked through, about 7-10 minutes.
  2. In a mixing bowl, combine mango, soy sauce, honey, vinegar, garlic, ginger, and chili flakes. Pour the mango glaze over the cooked chicken, stirring to coat. Add cornstarch mixture and cook until the glaze thickens, about 2 minutes.

Notes

Serve this dish with steamed jasmine rice or rice noodles for a complete meal. Garnish with green onions, sesame seeds, and fresh herbs for added flavor and presentation.
