Ingredients

For the Cake
  • 240 g all-purpose flour
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground cloves
  • 113 g unsalted butter, softened
  • 200 g granulated sugar
  • 100 g brown sugar
  • 2 large eggs
  • 360 ml unsweetened applesauce
For the Frosting
  • 227 g cream cheese, softened
  • 56 g unsalted butter, softened
  • 360 g powdered sugar
  • 1 tsp ground cinnamon
  • 1-2 tbsp milk (optional, for desired consistency)

Equipment

  • 9x13-inch baking pan

Method

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce, beginning and ending with the dry ingredients. Mix until just combined.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool completely.
  7. In a large bowl, beat together cream cheese and butter until smooth. Add powdered sugar, cinnamon, and vanilla, beating until creamy.
  8. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is reached.
  9. Spread the frosting evenly over the cooled cake. Slice and serve.

Notes

For added texture, stir in 1/2 cup chopped walnuts or raisins into the batter. Refrigerate the frosted cake for 30 minutes before serving for cleaner slices.
