- Make the apple filling: Cook diced apples, butter, brown sugar, and cinnamon in a skillet over medium heat for about 5–7 minutes, until softened and fragrant.
- Prepare the crumble: Mix flour, brown sugar, cinnamon, salt, and melted butter until coarse, crumbly clusters form.
- Build the cups: Press the crumble mixture firmly into greased muffin cups, creating a thick crust with slightly raised sides.
- Add the apples: Spoon the warm cinnamon apples into each crumble cup.
- Make the cheesecake filling: Beat cream cheese, sugar, egg, and vanilla until smooth and creamy. Spoon the mixture over the apples.
- Bake: Sprinkle a little extra crumble on top and bake at 350°F (175°C) for 22–28 minutes, until the edges are golden and the cheesecake is set.
- Cool & enjoy: Let them cool before removing from the pan. For an extra treat, drizzle with caramel before serving!
Notes
Chill them for about 30 minutes before serving for cleaner, prettier cheesecake cups. Serve with a drizzle of caramel for extra indulgence.
