- Wash and peel the yacon roots. Cut them into 1/4-inch thick slices.
- In a mixing bowl, toss the yacon slices with olive oil, salt, paprika, and black pepper until evenly coated.
- Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
- Place the seasoned yacon slices in the air fryer basket in a single layer, ensuring they are not overcrowded.
- Cook for 15-20 minutes, shaking the basket halfway through to ensure even cooking, until the yacon is golden brown and tender.
- Remove from the air fryer and let cool for a few minutes before serving.
Notes
For extra crispiness, you can increase the temperature to 400°F (200°C) for the last 5 minutes of cooking. Yacon is a great source of fiber and can be a healthy alternative to traditional fries.
