Ingredients
  

Salsify
  • 1 lb salsify about 4 medium roots
  • 2 tbsp olive oil
  • 1 cucchiaino salt
  • 0.5 cucchiaino black pepper
  • 0.5 cucchiaino garlic powder
  • 0.5 cucchiaino smoked paprika optional

Method
 

  1. Peel the salsify roots carefully to remove the tough outer skin. Cut them into 1/2-inch thick sticks or rounds.
  2. In a large bowl, toss the cut salsify with olive oil, salt, black pepper, garlic powder, and smoked paprika until evenly coated.
  3. Preheat the air fryer to 400°F for 5 minutes.
  4. Place the seasoned salsify in the air fryer basket in a single layer. You may need to work in batches depending on the size of your air fryer.
  5. Cook for 15-20 minutes, shaking the basket halfway through for even cooking, until the salsify is tender and golden brown.
  6. Remove from the air fryer, let cool slightly, and serve warm.

Notes

To prevent the salsify from browning too quickly, soak the peeled pieces in water with a bit of lemon juice until ready to cook.
