- Peel the lotus root and slice it into 1/4-inch thick rounds. Rinse under cold water to remove excess starch.
- In a bowl, toss the lotus root slices with olive oil, salt, black pepper, garlic powder, and chili powder until evenly coated.
- Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
- Arrange the lotus root slices in a single layer in the air fryer basket, avoiding overcrowding. You may need to cook in batches.
- Cook for 12-15 minutes, shaking the basket halfway through for even cooking, until the slices are crispy and golden brown.
- Remove from the air fryer and serve hot as a snack or side dish.
Notes
For extra crispiness, soak the sliced lotus root in water for 30 minutes before cooking, then dry thoroughly with a paper towel.
