Ingredients
  

Eggplant
  • 1 g medium eggplant (about 1 pound)
  • 2 cucchiaio olive oil
  • 1 cucchiaino garlic powder
  • 1 cucchiaino onion powder
  • 1 cucchiaino smoked paprika
  • 0.5 cucchiaino salt
  • 0.25 cucchiaino black pepper
  • 1 g Fresh parsley for garnish Optional

Method
 

  1. Preheat the air fryer to 375°F (190°C).
  2. Wash and slice the eggplant into ½-inch thick rounds.
  3. In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
  4. Add the eggplant slices to the bowl and toss until they are evenly coated with the oil and seasoning mixture.
  5. Arrange the eggplant slices in a single layer in the air fryer basket, making sure they are not overlapping. You may need to do this in batches.
  6. Cook for 12-15 minutes, shaking the basket halfway through to ensure even cooking, until the eggplant is golden brown and tender.
  7. Remove from the air fryer and garnish with fresh parsley if desired. Serve immediately.

Notes

For extra crispiness, sprinkle a little cornstarch on the eggplant slices before tossing them in the oil and seasonings.
