- Preheat the air fryer to 375°F (190°C).
- Wash and slice the eggplant into ½-inch thick rounds.
- In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
- Add the eggplant slices to the bowl and toss until they are evenly coated with the oil and seasoning mixture.
- Arrange the eggplant slices in a single layer in the air fryer basket, making sure they are not overlapping. You may need to do this in batches.
- Cook for 12-15 minutes, shaking the basket halfway through to ensure even cooking, until the eggplant is golden brown and tender.
- Remove from the air fryer and garnish with fresh parsley if desired. Serve immediately.
Notes
For extra crispiness, sprinkle a little cornstarch on the eggplant slices before tossing them in the oil and seasonings.
