- Rinse the spelt grains under cold water. In a medium saucepan, combine spelt and chicken broth. Bring to a boil, reduce heat, and simmer for 20-25 minutes until tender. Drain any excess liquid and set aside.
- While the spelt cooks, preheat your air fryer to 380°F (193°C).
- Pat the chicken breasts dry with paper towels. In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat the chicken breasts evenly with the mixture.
- Place the seasoned chicken breasts in the air fryer basket in a single layer. Cook for 12 minutes.
- After 12 minutes, flip the chicken and cook for an additional 8-10 minutes, or until the internal temperature reaches 165°F (74°C).
- Once cooked, let the chicken rest for a few minutes before slicing. Serve over the cooked spelt and garnish with fresh parsley if desired.
