  • 4 boneless, skinless chicken breasts about 1.5 pounds total
  • 240 ml rye breadcrumbs
  • 120 g grated Parmesan cheese
  • 1 cucchiaino garlic powder
  • 1 cucchiaino onion powder
  • 1 cucchiaino paprika
  • 0.5 cucchiaino salt
  • 0.5 cucchiaino black pepper
  • 2 large eggs
  • 15 g Dijon mustard
  • 1 bustina Cooking spray

Method
 

  1. Preheat your air fryer to 375°F (190°C).
  2. In a shallow bowl, mix the rye breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  3. In another bowl, whisk together the eggs and Dijon mustard.
  4. Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat thoroughly in the rye breadcrumb mixture.
  5. Lightly spray the air fryer basket with cooking spray. Place the coated chicken breasts in a single layer, ensuring they do not touch.
  6. Air fry for 12 minutes, then flip the chicken breasts and air fry for an additional 10-13 minutes, or until the internal temperature reaches 165°F.
  7. Remove from the air fryer and let rest for 5 minutes before serving.

Notes

For extra crispiness, spray the tops of the chicken with a little cooking spray before air frying.
