Method
- Preheat the air fryer to 380°F (193°C).
- In a bowl, mix the olive oil, garlic powder, onion powder, paprika, salt, and pepper. Coat the chicken thighs with this mixture.
- Place the seasoned chicken thighs in the air fryer basket in a single layer. Cook for 15 minutes.
- While the chicken is cooking, rinse the rice under cold water until the water runs clear.
- After 15 minutes, turn the chicken thighs over and add the rice and chicken broth to the basket. Ensure the rice is spread evenly around the chicken.
- Add the frozen mixed vegetables on top of the rice. Close the air fryer and cook for an additional 10 minutes.
- Once done, check that the chicken has reached an internal temperature of 165°F (75°C) and let it rest for 5 minutes before serving.
Notes
Let the dish sit for a few minutes after cooking to allow the rice to absorb any remaining liquid for better texture.
