- In a medium saucepan, combine the rinsed quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
- While the quinoa is cooking, preheat the air fryer to 380°F.
- In a mixing bowl, combine the chicken pieces, olive oil, garlic powder, paprika, salt, and pepper. Toss until the chicken is evenly coated.
- Place the seasoned chicken in the air fryer basket in a single layer. Cook at 380°F for 12 minutes, shaking the basket halfway through cooking.
- After 12 minutes, check the chicken for doneness. If needed, cook for an additional 3-5 minutes until the internal temperature reaches 165°F.
- Fluff the cooked quinoa with a fork and serve it on plates topped with the air-fried chicken. Garnish with chopped parsley if desired.
Notes
Make sure not to overcrowd the air fryer basket for even cooking. Cook in batches if necessary. Ensure the chicken reaches an internal temperature of 165°F for safety.
