- Preheat the air fryer to 320°F (160°C).
- In a bowl, combine the chicken pieces, olive oil, garlic powder, paprika, salt, black pepper, and chili powder (if using). Toss until the chicken is well-coated.
- Place the seasoned chicken in the air fryer basket in a single layer. Avoid overcrowding; you may need to cook in batches.
- Air fry the chicken for 10 minutes, shaking the basket halfway through.
- While the chicken is cooking, in a separate bowl, toss pumpkin seeds with a drizzle of olive oil and a pinch of salt.
- After the chicken has cooked for 10 minutes, add the pumpkin seeds to the air fryer basket and continue cooking for an additional 5 minutes, shaking the basket once to ensure even cooking.
- Check that the chicken is cooked through (internal temperature should reach 165°F) and the pumpkin seeds are lightly roasted.
- Remove from the air fryer and let sit for a couple of minutes before serving.
Notes
For extra flavor, marinate the chicken in the seasoning mix for 30 minutes before cooking. Serve with a fresh salad or steamed vegetables for a complete meal.
