Ingredients
  

Chicken
  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 cucchiaino garlic powder
  • 1 cucchiaino paprika
  • 1 cucchiaino salt
  • 1/2 cucchiaino black pepper
  • 1/2 cup pumpkin seeds (pepitas)
  • 1 cucchiaino chili powder (optional)

Method
 

  1. Preheat the air fryer to 320°F (160°C).
  2. In a bowl, combine the chicken pieces, olive oil, garlic powder, paprika, salt, black pepper, and chili powder (if using). Toss until the chicken is well-coated.
  3. Place the seasoned chicken in the air fryer basket in a single layer. Avoid overcrowding; you may need to cook in batches.
  4. Air fry the chicken for 10 minutes, shaking the basket halfway through.
  5. While the chicken is cooking, in a separate bowl, toss pumpkin seeds with a drizzle of olive oil and a pinch of salt.
  6. After the chicken has cooked for 10 minutes, add the pumpkin seeds to the air fryer basket and continue cooking for an additional 5 minutes, shaking the basket once to ensure even cooking.
  7. Check that the chicken is cooked through (internal temperature should reach 165°F) and the pumpkin seeds are lightly roasted.
  8. Remove from the air fryer and let sit for a couple of minutes before serving.

Notes

For extra flavor, marinate the chicken in the seasoning mix for 30 minutes before cooking. Serve with a fresh salad or steamed vegetables for a complete meal.
