- In a large bowl, combine the shredded chicken, mashed potatoes, Parmesan cheese, breadcrumbs, parsley, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Divide the mixture into 12 equal portions and shape each portion into a small oval or round croquette.
- Dip each croquette into the beaten egg, then roll in additional breadcrumbs to coat evenly.
- Preheat the air fryer to 375°F for about 5 minutes.
- Lightly spray the air fryer basket with cooking spray. Place the croquettes in a single layer, making sure they do not touch.
- Air fry the croquettes at 375°F for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool for a few minutes before serving.
Notes
For extra flavor, consider adding 1/4 teaspoon of smoked paprika to the mixture before shaping the croquettes. Serve with a side of your favorite dipping sauce for added taste.
