  • 2 cups cooked chicken, shredded
  • 1 cups mashed potatoes
  • 1/2 cups grated Parmesan cheese
  • 1/2 cups breadcrumbs plus extra for coating
  • 1/4 cups chopped fresh parsley
  • 1/2 cucchiaino garlic powder
  • 1/2 cucchiaino onion powder
  • 1/2 cucchiaino salt
  • 1/4 cucchiaino black pepper
  • 1 large egg, beaten
  • Cooking spray

Method
 

  1. In a large bowl, combine the shredded chicken, mashed potatoes, Parmesan cheese, breadcrumbs, parsley, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  2. Divide the mixture into 12 equal portions and shape each portion into a small oval or round croquette.
  3. Dip each croquette into the beaten egg, then roll in additional breadcrumbs to coat evenly.
  4. Preheat the air fryer to 375°F for about 5 minutes.
  5. Lightly spray the air fryer basket with cooking spray. Place the croquettes in a single layer, making sure they do not touch.
  6. Air fry the croquettes at 375°F for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove from the air fryer and let cool for a few minutes before serving.

Notes

For extra flavor, consider adding 1/4 teaspoon of smoked paprika to the mixture before shaping the croquettes. Serve with a side of your favorite dipping sauce for added taste.
