- Preheat the air fryer to 380°F (193°C).
- In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Toss the chicken thighs in the spice mixture until evenly coated.
- Place the seasoned chicken thighs in the air fryer basket in a single layer. Cook for 12 minutes, flipping halfway through.
- While the chicken is cooking, bring the chicken broth to a boil in a small saucepan. Once boiling, remove from heat, stir in couscous and mixed vegetables, cover, and let sit for 5 minutes.
- After the chicken is done, check for doneness (internal temperature should reach 165°F/74°C). If cooked, remove from the air fryer and let rest for a few minutes. If not, cook for an additional 2-3 minutes.
- Fluff the couscous and vegetable mixture with a fork. Slice the chicken and serve it over the couscous. Garnish with fresh parsley.
Notes
For added flavor, squeeze a little lemon juice over the chicken and couscous before serving. This dish pairs well with a light salad or roasted vegetables.
