- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine cooked amaranth, breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
- Cut chicken breasts into bite-sized pieces and season with salt and pepper.
- Dip each piece of chicken into the beaten egg, then coat with the amaranth mixture, pressing gently to adhere.
- Drizzle olive oil over the coated chicken pieces.
- Place the chicken in a single layer in the air fryer basket (you may need to cook in batches).
- Air fry for 10 minutes, then flip the chicken pieces and air fry for an additional 10 minutes, or until golden brown and cooked through.
- Remove from the air fryer and let rest for a few minutes before serving.
Notes
For extra crispiness, spray the chicken lightly with cooking spray before air frying. Serve with a side salad or your favorite dipping sauce for a complete meal.
