Ingredients
  

Bell Peppers
  • 4 medium bell peppers (any color)
  • 240 ml cooked quinoa (or rice)
  • 240 ml black beans, drained and rinsed
  • 240 ml corn (fresh, frozen, or canned)
  • 1 cucchiaino cumin
  • 1 cucchiaino chili powder
  • 240 ml shredded cheese (cheddar or Monterey Jack)
  • 1 cucchiaino Salt and pepper to taste
  • 15 ml olive oil
  • 5 g Fresh cilantro for garnish (optional)

Method
 

  1. Preheat the air fryer to 375°F (190°C).
  2. While the air fryer is preheating, cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine cooked quinoa, black beans, corn, cumin, chili powder, salt, pepper, and half of the cheese. Stir until well mixed.
  4. Drizzle the inside of each bell pepper with olive oil and season with a little salt and pepper.
  5. Stuff each bell pepper with the quinoa mixture, pressing down lightly to pack it in.
  6. Place the stuffed bell peppers in the air fryer basket upright, ensuring they don’t touch each other.
  7. Cook for 10 minutes, then sprinkle the remaining cheese on top of each pepper.
  8. Cook for an additional 2 minutes, or until the cheese is melted and bubbly.
  9. Carefully remove the peppers from the air fryer and let them cool for a few minutes. Garnish with fresh cilantro if desired.

Notes

For added flavor, try adding diced tomatoes or avocado to the filling mixture before stuffing the peppers.
