Method
- Preheat the air fryer to 375°F (190°C).
- While the air fryer is preheating, cut the tops off the bell peppers and remove the seeds and membranes.
- In a mixing bowl, combine cooked quinoa, black beans, corn, cumin, chili powder, salt, pepper, and half of the cheese. Stir until well mixed.
- Drizzle the inside of each bell pepper with olive oil and season with a little salt and pepper.
- Stuff each bell pepper with the quinoa mixture, pressing down lightly to pack it in.
- Place the stuffed bell peppers in the air fryer basket upright, ensuring they don’t touch each other.
- Cook for 10 minutes, then sprinkle the remaining cheese on top of each pepper.
- Cook for an additional 2 minutes, or until the cheese is melted and bubbly.
- Carefully remove the peppers from the air fryer and let them cool for a few minutes. Garnish with fresh cilantro if desired.
Notes
For added flavor, try adding diced tomatoes or avocado to the filling mixture before stuffing the peppers.
