Ingredients

Casserole Ingredients
  • 1 can whole kernel corn drained, 15 oz
  • 1 can creamed corn undrained, 14.75 oz
  • 1 package dry cornbread or corn muffin mix 8.5 oz, any brand
  • 1 cup sour cream full-fat for best flavor
  • 1/2 cup butter melted and cooled slightly
  • 2 large eggs lightly beaten
  • 1 tsp butter or cooking spray for greasing the dish

Equipment

  • 9x9 inch Baking Dish

Method

  1. Heat oven to 350 F / 175 C. Grease the baking dish.
  2. Stir melted butter, eggs and sour cream together. Fold in both kinds of corn.
  3. Add the dry mix and stir just until evenly combined, with no dry pockets. Transfer to the dish and level gently.
  4. Bake uncovered about 45 minutes, until lightly golden and the center is just set. If still wet in the middle, continue baking and check again after a few minutes.
  5. Rest 10 minutes, then cut and lift portions with a broad spatula.

Notes

This casserole can be easily doubled for larger gatherings. Serve warm and enjoy the creamy texture with a hint of sweetness from the corn.
