  • Make-Ahead Marvels: These bites store well, so you can make a batch ahead of time and enjoy them throughout the week. Perfect for meal prepping enthusiasts, they ensure that a wholesome breakfast is always within reach.

The Recipe

Ingredients:

  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup pumpkin puree (canned or fresh)
  • ½ tsp vanilla extract
  • 1 tsp pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)
  • ¼ cup almond flour (or oat flour for a softer texture)
  • 1–2 tsp honey or maple syrup (optional for added sweetness)
  • Pinch of salt

Instructions:

Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with silicone liners. A good non-stick pan is your best friend here, ensuring those bites pop right out without sticking. Silicone liners are particularly useful as they make the removal process seamless and reduce cleanup time.

Step 2: Mix the Base

In a mixing bowl, whisk together the cottage cheese, eggs, pumpkin puree, vanilla, and honey (if using). Stir in the pumpkin pie spice. Gradually add the almond flour and a pinch of salt. Stir until everything is combined and you have a smooth batter. The batter should be thick but pourable, resembling a slightly thicker pancake batter. If it seems too thick, a splash of milk can help achieve the desired consistency.

Step 3: Bake

Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full. Bake for 18–22 minutes, or until the bites are lightly golden and set in the center. A toothpick inserted should come out mostly clean, with maybe just a few moist crumbs clinging to it. This ensures that they remain moist and not overcooked.

Step 4: Cool & Serve

Let the pancake bites cool for a few minutes before removing them from the tin. Enjoy them warm or cold, depending on your preference. They’re perfect for a cozy, protein-packed breakfast or snack! For an extra touch, sprinkle with a bit of powdered sugar or cinnamon before serving.

Kitchen Tools You’ll Need

  • Mini muffin tin (silicone liners are a plus): Essential for shaping these bites into perfect portions.
  • Mixing bowl: A medium-sized bowl works well to accommodate all ingredients.
  • Whisk or fork: Whisk for a smooth batter, but a fork works in a pinch for breaking down any lumps.
  • Measuring cups and spoons: Accuracy is key, especially with baking, to ensure the right balance of flavors and textures.
  • Cooling rack: Allows air circulation around the bites as they cool, preventing sogginess.

The Benefits of Each Ingredient

  • Cottage Cheese: This is a star ingredient, providing a creamy texture and a boost of protein, which keeps you full and satisfied. It’s also a great source of calcium, supporting bone health.
  • Pumpkin Puree: Adds moisture and a delightful pumpkin flavor, loaded with vitamin A and fiber. It contributes to the moist texture and rich color, essential for these autumn-themed bites.
  • Eggs: They bind everything together and contribute to the fluffy texture we love in pancakes. Eggs also offer essential nutrients like vitamin D and B12.
  • Pumpkin Pie Spice: This spice blend brings the warm, cozy flavors of fall to life, enhancing the overall taste. The aromatic spices not only smell heavenly but also have anti-inflammatory benefits.
  • Almond Flour: Offers a gluten-free, nutty option that keeps the bites light and fluffy. Oat flour is a great alternative if you prefer a softer texture, and both options provide beneficial nutrients like vitamin E and fiber.
  • Honey or Maple Syrup: These natural sweeteners allow you to control the sweetness, making the bites as indulgent or as healthy as you like. They add a depth of flavor that complements the spices without overpowering them.

What to Serve With These Pancake Bites

These bites are versatile and pair well with a variety of sides. For a complete breakfast, serve them with:

  • Fresh fruits: Sliced apples or pears complement the autumnal flavors perfectly. Berries or bananas also work well if you have them on hand.
  • A dollop of Greek yogurt or whipped cream: Adds creaminess and turns these bites into a delightful treat. Greek yogurt also enhances the protein content of your meal.
  • A drizzle of maple syrup: For those who like it sweet, this addition can be a game-changer.
  • A warm cup of coffee or spiced tea: Completes the cozy breakfast experience. Consider a chai tea for an extra layer of spice that echoes the flavors in your bites.

Storage & Leftover Tips

These pancake bites are as convenient as they are delicious. Here’s how to keep them fresh:

  • Refrigerate: Store in an airtight container in the fridge for up to 5 days. They make for a quick grab-and-go breakfast. A paper towel inside the container can help absorb excess moisture, keeping them fresh longer.
  • Freeze: For longer storage, freeze them in a single layer on a baking sheet. Once frozen, transfer them to a zip-top bag. They’ll keep for up to 3 months. Label the bag with the date for easy tracking.
  • Reheat: To enjoy warm, pop them in the microwave for about 15-20 seconds or reheat them in a low oven until warmed through. For a crispier texture, use a toaster oven.

  1. It never solidified. I baked for even longer and it’s still liquid. All baking recipes I have tried with cottage cheese turn out the same. It is too much liquid.
